My first post here! :) I was talking to Denise on Sunday about pumpkin and how much I LOVE it, especially in the fall (which I wish would hurry up and get here!). So I thought I would share one of my pumpkin recipes.
Fancy Oatmeal
1/2 cup regular oats (not instant)
3 Tblsp. pure pumpkin
1 Tblsp. sugar-free maple syrup
1/4 t cinnamon
1 no-calorie sweetner packet (like Splenda)
Dash of salt
Bring 1 cup water to a boil in a small pot. Add oats and reduce heat to medium, stirring occasionally. Cook for 5 minutes, Add all other ingredients, stir and spoon into a bowl.
This only makes one serving, but you can obviously double, triple etc. if you want more!! Hope you all enjoy!

I love all orange foods; especially pumpkin. I’m getting much too happy just thinking about it, starting to shake with excitement like hoops and yo-yo. What a great, easy recipe! Thanks very much.

Sounds good. Now, if our pumpkins will just hurry up and grow!! We love pumpkin too. And, I am definitely ready for fall as well! I wonder what would happen if, Heidi, were to add a little pumpkin to her ‘chocolate gob’!?!!!

I tried this today and it was really good! Wasn’t sure about the sweetening, as it sounded like a lot for one serving, so tasted it without adding any sweetener first. Then tried it with just a drizzle of maple syrup… then added a pinch of stevia. It would be good garnished with sunflower seeds or chopped pecans! It was a big hit with my son too. Thanks!
